It is the usual choice for winter breaks between November and March, long visits to family living in the UAE, and professionals working remotely for a couple of months.
Your 60-day stay runs from the day you enter the country. You simply need to enter within the period in which the visa must be used; applying early does not reduce your stay.
This is a single-entry visa: once you leave the country it is considered used and you cannot return on the same visa. If you intend to stay in Dubai for two months while making short trips to neighbouring countries, look at the 60-Day Multiple Entry visa instead.
It costs more than the 30-day option, but compared with buying two separate 30-day visas it is both more economical and uninterrupted — there is no need to exit and re-enter the country in between.

If 30 days is enough, the 30-Day Single Entry visa is cheaper and offers express processing. A tourist visa cannot be used for work, study or residency purposes.
60-day single-entry visa: you must enter the UAE within 58 days of the visa being issued. From your entry date you may stay up to 60 days, single entry only. Extensions are not permitted; overstaying incurs a USD 3,000 fine plus USD 150 per day. The visa is valid in all emirates (Dubai, Abu Dhabi, Ajman, Fujairah, Ras Al Khaimah, Sharjah, Umm Al Quwain).
